Mark James has been specially selected by the Head Judge (Rod Bowker) to be an expert judge for the Matchday Hospitality Awards. This judge has been chosen based upon their extensive knowledge and involvement in both the chef and hospitality industries, with over 20 years extensive experience and a passion for driving up standards. Upon a completion of a 3 year Apprenticeship programme with East Dyfed Health Authority – Mark developed his base knowledge for Hospitality and the service sector working between 4 Hospitals in the South Wales area In 1992 he was offered the position of Senior Chef Tournant at the Belmont Hotel and country club in Bermuda.
Mark was promoted during his time there to sous Chef in 93 and then to Executive Head Chef in 94. Then he was offered the job of Head Chef at the exclusive White Sands & Cottages in Bermuda. In 2001 he decided to return home to the UK where he was offered the opportunity to joining the Pembrokeshire College Catering Team in the position of Senior Lecturer In hospitality.
Teaching for 10 years which involved the complete development of young learners to be ready for industry needs, installing good practice in food preparation and service skills. Now working Colleges in a similar role and currently work as lecturer in Hospitality in Wales.
His real passion has always been experiencing quality dining experiences Mark has judged in many culinary and food service competitions and has a reputation for being fair with his results, giving good feedback to competitors.
