Biography

Ian Jaundoo trained at what was the then widely respected Colquitt Technical Catering College (1971 – 1974) in Liverpool. Following college, he continued his career training at prestigious restaurants and hotels in the city for 12 years culminating in his Head Chef role at The Ladbrokes Adelphi Casino.

A chance meeting with an old tutor who was retiring mentioned that he would be an ideal candidate for a Chef Lecturers position especially as he had already gained the City & Guilds 706/3 Certification (the only chef to pass on Merseyside in 1979). Ian took up the post of Chef-Lecturer in 1981 and is now in his final full year of working having seen many changes in college title and teaching methods.

From September he will be reducing his hours and will concentrate on the colleges public restaurant where he will oversee all lunch, dinner and event provision.

For the last 12 years he has been Executive Chef responsible for the colleges public Academy Restaurant and the Academy Cafes spread over 5 sites that he has line managed also in terms of staffing, food production and presentation. The Executive Chef position was offered to Ian when the college wanted to become more commercially focussed and senior management were aware of Ian’s extensive industry experience that had run concurrently alongside his college hours for 30 plus years.

From 1985 – 1993 after entering a few local cookery competitions he decided to enter Craft Guild of Chefs led regional and national Salon Culinaires  gaining numerous Gold, Silver and Bronze medals. In addition he had similar success in several regional Chef of The Year competitions

He was then approached to help with judging by chefs who had previously judged him and who felt his experience would be a welcome addition to the Craft Guild judging team.  He has since judged regularly at regional and national salon competitions such as Hotelympia and all recent HRC events.

For the last 20 years he has been team manager trainer/mentor for the college’s Academy Culinary Team taking teams of students across the country to compete and various industry competitions and has seen his teams amass in excess of 1000 awards over this period of time in both individual and team classes.

Ian is a Fellow of the Craft Guild of Chefs, a Member of the Master Chef of Great Britain, A recipient of the Craft Guilds Education Award (2011) and was inaugurated as a Disciple of Escoffier earlier this year.
